AI for restaurant kitchens: hygiene, uniform and food safety in every branch

How restaurant chains and central kitchens use cameras to check hairnets, gloves and handwashing, catch burnt oil and incomplete orders, and keep every branch on standard.

One standard, many branches

A chain lives on consistency. The same burger should look and taste the same in every branch, and every kitchen should pass an inspection on any day, not only on the day the area manager visits.

Kitchen cameras are already installed in most chains for security. With computer vision, the same cameras check hygiene and food-safety rules continuously and send each branch a daily score.

What can be checked automatically

  • Hairnets, caps, masks, gloves and aprons for every person in the food zone.
  • Handwashing at the sink before returning to the prep station.
  • Phones used in the food zone, and staff leaving stations unattended.
  • Pests such as rodents and cockroaches, especially at night.
  • Fridge and freezer doors left open, and raw and cooked food mixed on the same surface.
  • Frying oil that has darkened and needs changing, and burnt items leaving the oven.
  • Orders checked against the ticket before handover, so no item is missing.

Front of house matters too

The same system measures waiting time at the counter, table turnover, dining-area cleanliness and whether the branch opened on time. For delivery-heavy brands, it can also track how long riders wait for orders.

Rolling it out across a chain

  1. 01
    Agree the standard

Turn your brand manual into a short list of checkable rules per station.

  2. 02
    Pilot in two branches

One strong and one weak branch show the range and make the case internally.

  3. 03
    Share a league table

A weekly ranking of branches by hygiene score motivates managers more than any memo.

Questions we often hear

Will staff feel watched?

Introduce the system as a standard check for everyone, share the scores openly and focus on coaching, not punishment. Alerts are about rules, not about individuals.

Do kitchen cameras survive heat and steam?

Choose cameras rated for the environment and place them away from direct steam and grease. Regular lens cleaning is part of the routine.
